This is one breakfast recipe I love to cook.I like to call this Merry Sunshine. This time the lucky recepient was my Husband. The best part of Merry Sunshine is it takes less than 15 minutes to cook and has the colours that would make upto a happy start to the day.
You would need:
3 baby carrots
2 medium eggs
1 tsp of lime juice
butter [ optional ]
1 tsp of milk
a handful of spinach
salt
pepper to taste
To make the eggs
Beat the eggs in a bowl. Add the lime juice, two drops of oil, milk and a pinch of salt and beat well. Place the bowl in a microwave and cook for 1 to 2 minutes. The egg gets perfectly cooked, tastes brilliant and is not as oily as an omlette. Serve with fresh pepper.
To cook the carrots
Poach the carrots in boiling water for 5 minutes. Add a dollop of butter and add the carrots to the butter. Add salt and sprinkle some lime and a drop of honey.
To make the spinach
Soak the spinach in water and heat for 2 minutes in the microwave. Add the spinach bunch into the mixture. Add a spoonful of milk, a pinch of salt and lime juice. Make into a fine paste.
Done!
Serve with wholewheat bread
